From some of the finest sites in the appellation; Les Cabrieres, La Crau, Couthezon and Nayls with vines over 50 years old. Jean-Jacques Sabon’s son-in-law, Didier Negron makes a sublime wine which is a big favourite of Robert Parker.
All the grapes are carefully de-stemmed before fermentation which takes place over 20 days in small cement vats and steel cuvées. The resulting wine is matured in boudres and used barriques and has no finings or even filtration making it as pure as can be.
With the climate warming this has now tipped 16% ABV and falls into a higher duty bracket but despite that is still velvety smooth..
